This agridulce (bitter-sweet) style vinegar has been made with Spanish Chardonnay wines, slowly acetified and aged in oak using the traditional method with a minimum 8 year aged "Solera". Small quantities from each oak barrel are botlled, the barrel is then refilled with fresh vinegar and some of the grape juice, preserving a high quantity of the aged vinegar.
